Bourgogne Cotes Couchois 'Les Rompeys', Champs de l'Abbaye 2003

Alain et Isabelle Hasard, a biodynamic and decidedly artisinal winery, is known for its exceptionally elegant Pinot Noir. This is one of the few remaining wineries that does absolutely everything by hand, from hand-harvesting, to utilizing a manual grape press, to labor-intensive manual bottling. Blended from 80% Pinot Noir and 20% Gamay, Les Champs de l'Abbaye Bourgogne Les Rompeys is a stunning example of this winery's craft. Showcasing the Cotes du Couchois terroir, including its chalk, flint, and oceanic fossil-rich soil, this is an earthy and nuanced red sure to excite even the most experienced Burgundy lover. This is really quite an elegant wine for a Bourgogne with lovely red, blue and violet notes trimmed in a bit of soil and spice that can also be found on the supple, round and notably pure flavors that are seductive, textured and persistent.
